Specialities include Ghisoni trout, tender herb-flavoured veal and chestnut fritters. Diners with a sweet tooth must try the Fiadone, a Corsican flan made with Brocciu cheese and lemon. There are a range of set menus to choose from, including a children’s menu. To accompany your meal, the manager can advise you on the best wine to choose from the wide selection kept in the restaurant’s cellar. For an after-dinner drink, there are many types of Corsican liquor available in the hotel bar.
